FAQs

  • On a monthly basis we submit samples of eggs from each of our 4 coops and compare them with commercially known brands eggs, for the lab to determine (using the Kjeldahl Method / Dumas Method / Biuret test and HPLC) the protein levels and amino acid profiling.

It’s vital for us to offer our customers a reliable and “ever evolving” source nutritional data instead of the “assumed” nutritional labels we all see on every food product nowadays.

  • Yes, there are several scientific studies that demonstrate that specific breeds of chickens have better genetic traits when it comes to passing along to their eggs better concentration of protein and amino acid levels.

Environmental stress and the capability of the chicken breed to adapt and tolerate specific weather and terroir conditions influence the overall final product: the egg.

Therefore local hens you can visit and offer “traceability” to the way they are fed and kept produce eggs far more nutritious than others.

  • Like any other food, eggs are best when consumed fresh, the fresher the better, hence our promise “Eggs from Today” to ensure that, like no other, you will receive always eggs laid the same day.

Most eggs in the US reach consumers within 2-3 weeks of being laid. They are safe to be eaten but are they fresh? the answer is no.

  • GMO Corn and GMO Soy, are they bad for your chickens, your eggs and ultimately bad for your health? The answer is a plain NO.

Despite many Social Media allegations and countless of non-scientific publications, the genetically modified Corn and Soy does not affect at a cellular level the genetic code of the chickens and therefore the eggs.

Chickens are the Midas of animals, they are omnivorous, they eat anything and everything and their digestive system transforms all intake into a perfect blend of essential and non-essential amino acids who in turn are the building blocks of proteins who are the building blocks of everything.

All this process happens without any genetic transference or mutation between the ingested food and the chicken and the resulting egg.

And this is proven in many scientific publications by all top research centers and universities in the US, Europe and Asia.
